I know it's been a while since my last blog, and I meant to blog on Mother's Day, but clearly it didn't happen. After spending way too much time watching YouTube clips and reading dessert blogs, albeit great blogs, I was inspired to make some homemade chocolates for Mother's Day. Anyone who knows me is not surprised that I decided to do something involving food. I actually dabbled in making chocolates in high school, so I figured I'd try it again. After all, if I could make chocolates in high school, I'd surely be able to do it now, right? Wrong!
I didn't want to use chocolate melts because although they are easy and foolproof, they are actually chocolate flavored instead of real chocolate. Well, there's a little thing called tempering when you melt real chocolate that has to do with rebuilding the crystals in chocolate after you've melted it. Tempered chocolate has a nice sheen and snap to it; it also doesn't melt when you leave it out at room temperature.
After a failed attempt at tempering, I was even more determined to prove to myself that as a half-grown adult, I surely could properly temper chocolate. I tried a really easy recipe that has three ingredients (Oreo cookies, cream cheese, and melted chocolate). Oreo truffle recipes are ubiquitous on the Internet, so I'll leave you to find the best recipe that calls out to you. I've taken some pics of my experience. Yes, I'm aware that there aren't pics of actual chocolate tempering and dipping. Do you know how hard it is to take pics when your hands are covered in chocolate and Oreo crumbs? Enough said!

Here's what the mixture of Oreo cookies and cream cheese looks like after it's taken a spin in the food processor. Some recipes will have you form balls right after making the truffle base, but I found that freezing the mixture first makes it easier to work with. I popped the pan in the freezer and went for a run :)
After the truffle mixture was firm enough to handle, I rolled them into about 1 inch balls. After tempering real chocolate, I dipped the Oreo truffles into the chocolate and placed them back on the parchment paper lined cookie sheet to firm up again. If you find that the truffle balls are getting too soft from waiting their turn to be enrobed in chocolate, just place them back in the fridge.
